Yorkshire Lamb Patties Recipe

Ingredients required for Yorkshire Lamb Patties

For the Lamb Mixture:

  • 500 grams of ground lamb
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/2 teaspoon of ground cumin
  • 1/2 teaspoon of ground coriander
  • Salt and pepper to taste
  • 1 tablespoon of olive oil

For the Yorkshire Pudding Batter:

  • 1 cup of all-purpose flour
  • 1 cup of milk
  • 2 large eggs
  • A pinch of salt
  • Vegetable oil for greasing the muffin tin

For the Minted Yogurt Sauce:

  • 1/2 cup of Greek yogurt
  • 2 tablespoons of fresh mint, chopped
  • 1 clove of garlic, minced
  • Salt and pepper to taste

Instructions

Step 1: Prepare the Lamb Mixture

  • Add ground lamb, chopped onion, minced garlic, ground cumin, ground coriander seed, salt, and pepper into a mixing bowl and gently combine all the ingredients until everything is evenly mixed. 
  • Pour out onto an aluminum sheet pan. 
  • Gently form patties out of this mixture using your hands.

Step 2: Cook the Lamb Patties

  • Heat olive oil in a medium-high skillet over medium-high heat. 
  • Once hot, place lamb patties in it to cook for approximately 4-5 minutes per side or until nicely browned and cooked through. 
  • Upon completion of cooking time, remove them from the skillet and set them aside to rest before proceeding with other recipes.

Step 3: Prepare the Yorkshire Pudding Batter

  • Whisk the flour, milk, eggs and pinch of salt together until a smooth batter forms.
  • Preheat your oven to 220°C (430°F).

Step 4: Assemble the Patties

  • Prepare a muffin tin by applying vegetable oil.
  • Next, spoon out small portions of Yorkshire pudding batter into each muffin cup – about 1/3 full each time.
  • Additionally, top each batter-filled cup with one of your lamb patty patties that has been precooked prior to adding any other ingredients.
  • Pour more batter over the lamb patties until the cups are 2/3 full.

Step 5: Bake

  • Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the Yorkshire pudding has puffed up and turned golden brown.

Step 6: Make the Minted Yogurt Sauce

  • In a bowl, combine the Greek yogurt, chopped mint, minced garlic, salt, and pepper. Mix well.

Step 7: Serve

  • Carefully remove the lamb patties from the muffin tin and serve hot with a dollop of minted yogurt sauce on top.
